You may or may not have gathered but we're pretty obsessed about all things edible - and a few more things too! As we regularly stumble upon some great finds, food or no, and we thought we'd share our favourites with you!
With Christmas around the corner, I received this De Buyer Silicone Baking Mat, which had been on my list for some time. I jumped at the occasion to try it last week, making a galette des rois, and can confirm that it is even better than I had anticipated.
The main reason I was after this baking mat was for its reusability. Made of silicone-coated fibreglass, the mat is highly heat resistant and durable. This means I can significantly reduce my use of disposable baking sheets. On top of that, it's really easy to clean, which makes for a nice added bonus. However, what I was not expecting was the fact that it visibly IMPROVED my bakes too!
As it is a little like a mesh, it helps distribute heat evenly and, to my delight, helped my pastry get super crisp underneath. And, frankly, who here isn’t after a delightful crips pastry bottom? Now I understand why it is so often used by professionals!
If you enjoy baking, this mat is specifically great for pastry of all sorts. I would not however use it for baking genoise or other sponges. Nonetheless, if you make pastry and biscuits often, I simply cannot recommend this silicone mat enough, both for its sustainability and effectiveness!
