Looking for an easy treat or edible gift? We’ve got you covered with this dark chocolate bark flavoured with cardamom. The beauty of chocolate bark is how simple it is to make and its versatility: all you really need to do is melt chocolate, add your favourite nuts, dried fruits and spices – in this case hazelnuts, pistachios and cardamom – and leave to set. A bit like making your favourite chocolate bar! Using a dark chocolate and adding nuts makes it a relatively healthy sweet treat too. Perfect to bring to a dinner party or to give to your favourite people on any occasion.

360g Dark Chocolate (70%)

100g Pistachios

100g Blanched Hazelnuts

46 Cardamom Pods (or 1/2 tsp of Ground Cardamom)

A pinch of Salt

  1. Ideally, roast the hazelnuts and pistachio nuts on a baking sheet for 10-15 minutes at 180˚C, or until golden. This will release all their wonderful nutiness!
  2. Place the roasted nuts on a chopping board and roughly chop up.
  3. Grind the cardamom pods for extra flavour. To do so, open the pods and add the seeds in a mortar and pestle and grind to a fine powder. Alternatively, you can use a spice grinder too.

You can, of course, use ground cardamom powder, it may be less strong in flavour so taste throughout to adjust the cardamom potency to your preference.

  1. Break the dark chocolate up into smaller pieces and place in a bowl. Place over, but not touching, a pan of simmering water. Add the cardamom powder when the chocolate is melted and smooth and stir. Here you can adjust the potency of the cardamom if desired.
You can also melt the chocolate in the microwave. Melt for 30 seconds at a time stirring everytime, until almost all melted. Then, add in the remaining chocolate and stir until completely dissolved.
  2. Add half of the chopped nuts to the melted chocolate and mix slightly.
  3. Line a baking tray with parchment baker. Pour the melted cardamom chocolate mix onto the tray and spread using a spatula to about half a centimeter.
  4. Sprinkle the remaining hazelnuts and pistachios over, followed by a sprinkle of sea salt. Flatten the nuts to make them sink into the chocolate slightly more.
  5. Leave to cool at room temperature for 2 to 4 hours, or place in the fridge for about 15 minutes if you’re in a rush.
  6. Once the chocolate has hardened completely break up into pieces and serve and share with your loved ones. These cardamom chocolate bark pieces make for a great gift and can be kept at room temperature for a week.
