MARMALADE & CARAWAY CARROTS

Sweet, tart Marmalade makes for a caramelised carrot the stuff dreams are made of. A great twist on the classic combination of orange and carrots, the caraway seeds really set this dish off taking it from side dish to main event.

Ingredients

500g Carrots, washed

4 tsp. Marmalade

30ml Extra Virgin Olive Oil

1 tsp. Caraway Seeds

1 Small Bunch of Thyme

Generous Pinch of Salt and Pepper

METHOD

1. Preheat the oven to 180 °C.

2. In a large mixing bowl, combine the olive oil, marmalade, thyme, caraway seeds, salt and pepper and mix together. Add the carrots to the bowl and ensure that the carrots are evenly glazed. Transfer to a baking tray and place in the oven.

3. Roast in the oven for 25-30 minutes until just starting to turn golden and are cooked through. Serve immediately.
