5 of our favourite classic pasta dishes with a twist for a new lease of life.

PASTA

When throwing together the terms Classic, Authentic, Traditional and Italian within the same sentence, a collective intake of breath is usually followed. When one adds the word Pasta into the equation, the stakes raise - As an army of nonnas wait with bated breath, rolling pins in-hand, prone to strike at the slightest misstep or deviation from their own, time-honoured recipe.

A perilous situation to find one’s self in.

Which is why we are avoiding the issue entirely. Instead, we embrace those classic pasta dishes we all know and love, adding our own twist to the tale - to be ventured into when looking to add a flourish to your familiar favourite. They may not necessarily be the most traditional, but they could be the most delicious!    
Duck Egg Carbonara

DUCK EGG CARBONARA

Carbonara remains a beloved pasta dish in most households, this incarnation adds bells and whistles – luxuriating with rich duck eggs, and adding texture with a pancetta pangritata. A personal favourite.
Bolognese at its Best

BEEF CHEEK BOLOGNESE

Surely one of the most beloved comfort foods throughout many a household. Our version uses Beef Cheek to create a wonderfully rich and decadent version of this classic dish. Exemplifying Bolognese to be enjoyed as we see it – a comforting treat for an equivalent occasion.

Nothing quite compares to the satisfaction of carefully crafted, homemade ravioli. In our version, classic ricotta ravioli meets the big flavours of porcini mushrooms. Served with a sage brown butter sauce that adds to the luxury.

CASARECCE WITH SAUSAGE RAGU

A delicious variation on a traditional Italian meat sauce. High-quality Italian fennel sausages provide a perfect base and depth of flavour, whilst the wine, lemon and parsley bring freshness to the dish. A favourite when in need of comfort.
N'duja Amatriciana Pasta

‘NDUJA AMATRICIANA

An unctuous lightly spiced tomato sauce simmered with Cured pork, a little wine and a mountain of pecorino - it’s the stuff pasta enthusiasts dream of. We have also chosen to omit the chili flakes the recipe calls for replacing it instead with ‘Nduja. The spiced calabrian salami brings the requisite heat the sauce requires whilst also adding a deeper, meatier flavour to the dish. Try it for yourself - it will become a new favourite.
