Salty and sweet is one of those pairings that cannot fail to excite. This whipped feta recipe offers that in spades whilst adding the heat of chilli and savour of thyme. Need I say more? Slather over bread, dollop into soups, feign healthy-eating by dipping into with vegetables – this dip is a game-changer.

Ingredients

THE WHIPPED FETA

200g Feta,

100g Greek Yoghurt,

Pinch of Salt

CHILLI HONEY

1 tbsp. Runny Honey,

½ tsp. Aleppo Chilli Flakes,

½ tsp. Dried Thyme

TO GARNISH

15g hazelnuts, toasted and roughly chopped 

Thyme Leaves, a pinch

METHOD

THE CHILLI HONEY
  1. Combine the honey, chilli flakes and thyme in a small bowl and leave to infuse. 

TIP – Try placing the honey in the microwave for 30 seconds to ensure the honey infuses with the chilli and thyme more quickly. 

THE WHIPPED FETA
  1. Place the feta and yoghurt into a food processor. Blitz until smooth and it has achieved a whipped texture. Season to taste.
  2. Transfer to a shallow bowl or plate. Serve with the chilli honey drizzled over and top with toasted hazelnuts and thyme.

TIP – This should keep in the fridge for several days.
